In 2013, after an international career in marketing in Asia and Europe, Olivier Faucon decided to become winegrower. Three years later, in 2016, he founded a boutique winery: Mas Combarèla. Located in the French department of Hérault in Languedoc, it has 12 hectares of vineyard with exceptional terroir dominated by limestone and altitude, all certified AOP Terrasses du Larzac.
The winery has modern, high-performance equipment that allows tailor-made vinifiication of grapes from selected plots, to make complex, fine wines. Mas Combarèla has been certified organic since 2019; the domaine prefers an artisanal approach, prioritising quality over quantity, to craft great wines focused on pleasure and elegance.
Hand-picking, rigorous sorting including green harvesting helps ensure optimum maturity and good sanitary conditions for healthy fruit, and yields are kept low (about 25 hl/ ha). In the cellar, hygiene and temperature control are essential. Thermo-regulated stainless steel vats are used for vinification, while wooden vats, oak barrels, stoneware jars and concrete egg-shaped tanks are used for ageing and maturing.

The Bettane + Desseauve guide gives us 3 stars and qualifies our wines as “magnificent, of rare intensity”, giving them an average score of 16.5 / 20. Same average rating from Jancis Robison who emphasizes “the harmony of fruit and tannins”. We are also honored to be listed in the “Languedoc Rising Stars” category in the Hugh Johnson’s Pocket Wine Book.
